Buy Fresh Shellfish at Fredimare

Looking to buy fresh shellfish for restaurants, catering, professional kitchens or home use? At Fredimare, you will find a varied selection of shellfish, each offering its own distinctive flavour, texture and culinary possibilities. Our range includes vongole, cockles, palourdes, clams, razor clams, amandes, whelks and periwinkles. The selection also includes refined Bouchot mussels. Fresh shellfish are exceptionally versatile and can be prepared simply or incorporated into sophisticated fish and seafood dishes.

Vongole, Cockles and Palourdes

Vongole, cockles and palourdes are popular shellfish for dishes where a pure, saline flavour takes centre stage. Vongole are particularly well known in Italian cuisine and are the classic ingredient in pasta alle vongole. Briefly cooked in a pan with olive oil, garlic, herbs and optionally white wine, the shells open and release their natural juices and flavour into the dish. Cockles and palourdes are also excellent for pasta, risotto, seafood soups and other Mediterranean preparations.

Clams and Amandes

Clams and amandes offer a firm texture and distinctive shellfish flavour. They can be served simply or incorporated into a variety of warm preparations. Cook them briefly with garlic, herbs, butter or olive oil, or use them as an ingredient in pasta, soups and composed seafood dishes. Combining different shellfish varieties creates dishes with a wide range of textures and flavours.

Fresh Razor Clams

Razor clams are instantly recognisable by their long, narrow shells. Their meat has a distinctive texture and pronounced maritime flavour. They are particularly suitable for briefly pan-frying or grilling. Pair them with garlic, olive oil, lemon and fresh herbs for a simple preparation that allows their natural flavour to shine. Their distinctive shape also makes razor clams an attractive choice for gastronomic presentations and elaborate fruits de mer platters.

Whelks and Periwinkles

Whelks and periwinkles are classic shellfish with a distinctive taste of the sea. They are traditionally cooked briefly in salted water or an aromatic court-bouillon. Once cooked, the meat can be removed from the shell and enjoyed on its own or incorporated into various cold preparations. Whelks and periwinkles are also a classic addition to an extensive fruits de mer platter.

Bouchot Mussels

Our selection also includes Bouchot mussels. These smaller mussels are prized for their refined character and are an excellent choice for both classic and gastronomic preparations.

Prepare them simply with white wine, vegetables and fresh herbs, or use them in seafood soups, pasta and other fish and seafood dishes.

Shellfish for Pasta, Seafood Soup and Fruits de Mer

One of the great advantages of fresh shellfish is their versatility. A wide variety of dishes can be created using different species. Use them for pasta, risotto, paella, seafood soup, bouillabaisse and fruits de mer, or simply prepare them with garlic, olive oil, butter and fresh herbs. For an impressive fruits de mer platter, different shellfish can be combined with oysters, mussels, langoustines, crab and lobster to create an extensive seafood presentation.

HEAD MEAT

It has the unique characteristic of having a fat percentage similar to that of ventresca, although its meat is firmer. It offers many  cooking options. It's ideal for pairing with acids (which reduce the high fat content), with cooked dishes such as passion fruit cream, or with traditional dishes such as pickles. Due to its high fat content, it works very well grilled and barbecued. Grilled, it would go perfectly with red peppers, truffled potato cream, or pan-fried pate . It is recommended to cook it 100%  or well done .

tuna-harmonica

HARMONICA

It's called "harmonica" because its meat is marbled, with a feather appearing approximately every half centimeter, spanning the entire piece horizontally and vertically. It can be eaten either on the bone, which would be the most traditional way, or in  a terrine. To debone it,  it's essential to cook the piece thoroughly: 15 to 25 minutes in an aromatic broth (with pepper, bay leaves, onion, etc.) at about 65 degrees, until the bone comes loose easily. Next, we compact it in a terrine to  obtain rectangles to which we apply different cooking techniques.  The flavor of the "harmonica" is very surprising, as it has a very meaty flavor reminiscent of veal.
