Our cockles are harvested by hand and are also called ‘The Gold of the Wadden’. Cockles live on the surface in the sand. The meat of the cockle is firm and contains a lot of iodine. The tiniest cockles can be eaten raw. Fresh cockles are easy to prepare and, for example, boiled they make a delicious part of a Fruits de Mer platter. Additionally, cockles are tasty as tapas or incorporated into paella, as well as in soups or other dishes. After boiling the cockels for one and a half minutes in a broth, they open up and are ready to eat.
