Amandel shells (Amandes) have a beautiful round shape and a marbled, thick shell. The meat of this shellfish is firm and flavorful. Amandes live on the seabed and dig into the sediment up to a depth of 20 cm. Amandel shells are caught throughout the year in the Atlantic Ocean. The shell contains a relatively large amount of meat, which is firm and deliciously flavorful. This shellfish is definitely a good addition to a Fruits de Mer platter. To open, place the amandes in hot broth for about 3 minutes, making the shell easy to open. The amande is delicious in fish soup or as a surprising bitter garnish.
