Known from the beach: razor shells, also called American sword shells or mesheften. The name "razor shell" refers to an old-fashioned (barber’s) razor. The shell is elongated, green-brown in color, and notably shiny. Its length can vary from 6 to 18 cm. Our razor shells are harvested in the North Sea. Mesheften can be cooked like mussels (3 minutes) or briefly stir-fried. They are perfect for pasta dishes or as an appetizer, and they also look beautiful on the plate.
