Whelks are large snails. The whelk lives on a soft sandy bottom. The interior of the shell is white, while the outside is brown/green. Whelks can grow up to 10 cm in size. The best way to prepare them is to briefly cook them in a strong court-bouillon. Not too long, or they become tough. We source our whelks from France.
They are boiled for 20 minutes in a very strongly seasoned broth. Do not cook this shellfish longer, as it becomes tough. The meat can be removed from the shell with a needle; for this, you need to remove the small hat (the operculum) attached near the opening with a fork before extracting the meat.
