Buy Shrimp at Fredimare

Looking to buy premium shrimp for restaurants, catering, professional kitchens or home use? At Fredimare, you will find a carefully selected range of shrimp for a wide variety of cold and hot dishes. From classic North Sea shrimp and Northern shrimp to peeled pink shrimp in different sizes, there is a suitable option for every culinary application. Shrimp are prized for their refined flavour, succulent texture and exceptional versatility. They are ideal for starters and salads, but can also be used in pasta, soups, rice dishes and warm seafood preparations.

North Sea Shrimp

The North Sea shrimp (Crangon crangon), also known as brown shrimp or grey shrimp, is a true classic from the North Sea. This small shrimp is distinguished by its refined, subtly sweet flavour and tender yet firm texture. At Fredimare, North Sea shrimp are available both peeled and unpeeled. Peeled North Sea shrimp are ready to use and particularly convenient for professional kitchens, while unpeeled shrimp offer the complete shellfish experience and are ideal for dishes where the shrimp itself takes centre stage. North Sea shrimp are essential in classics such as shrimp cocktail, shrimp croquettes and shrimp salad. They are also delicious on bread or toast, in starters, pasta, soups and refined fish and seafood dishes.

Pink Shrimp in Different Sizes

In addition to North Sea shrimp, Fredimare offers peeled pink shrimp in a range of different sizes. Choose from Small (S), Medium (M), Large (L) and Jumbo (XL). The different size grades make it easy to select the right shrimp for each preparation. Smaller shrimp are particularly suitable for salads, fillings, soups and composed dishes, while larger shrimp are ideal for starters, shrimp cocktails, pasta and dishes where the shrimp should have a more prominent presentation. Our pink shrimp are available in convenient 500 g packs as well as larger boxes for professional use.

Shrimp for Cold and Hot Dishes

Shrimp are exceptionally versatile in the kitchen. Peeled shrimp can be used directly in cold dishes such as salads, shrimp cocktails, sandwiches, appetisers and seafood platters.

They are equally suitable for warm preparations. Add shrimp to pasta, risotto, stir-fries, seafood soups or sauces. Because shrimp meat is naturally tender, only a short cooking time is generally required. Overcooking can cause the shrimp to become dry and tough. Combine shrimp with ingredients such as lemon, garlic, butter, fresh herbs, tomato or a light cream sauce to complement their natural flavour.

North Sea Shrimp Shells for Stock and Bisque

Even the shells of North Sea shrimp have considerable culinary value. Fredimare offers frozen North Sea shrimp shells, ideal for preparing a rich shrimp stock, bisque, seafood soup or shellfish sauce. By gently roasting the shells before simmering them with aromatic ingredients, you can create a concentrated base with the distinctive flavour of North Sea shrimp.

This allows another valuable part of the shrimp to be fully utilised in the professional kitchen.

Shrimp for Restaurants and Home use

Whether you are looking to buy North Sea shrimp, need pink shrimp for a salad or pasta dish, prefer unpeeled shrimp or require shrimp shells for a rich bisque, Fredimare offers a variety of species, sizes and packaging options. Larger packs are available for restaurants, catering and professional kitchens, while smaller packs are convenient when less product is required. This makes it easy to select the quantity and size grade that best suits your preparation. Discover Fredimare’s selection of premium shrimp and choose the type, size and packaging that best suits your dish.

It's ideal for pairing with acids (which reduce the high fat content), with cooked dishes such as passion fruit cream, or with traditional dishes such as pickles. Due to its high fat content, it works very well grilled and barbecued. Grilled, it would go perfectly with red peppers, truffled potato cream, or pan-fried pate . It is recommended to cook it 100%  or well done .

tuna-harmonica

HARMONICA

It's called "harmonica" because its meat is marbled, with a feather appearing approximately every half centimeter, spanning the entire piece horizontally and vertically. It can be eaten either on the bone, which would be the most traditional way, or in  a terrine. To debone it,  it's essential to cook the piece thoroughly: 15 to 25 minutes in an aromatic broth (with pepper, bay leaves, onion, etc.) at about 65 degrees, until the bone comes loose easily. Next, we compact it in a terrine to  obtain rectangles to which we apply different cooking techniques.  The flavor of the "harmonica" is very surprising, as it has a very meaty flavor reminiscent of veal.
