Sea urchin
Fresh sea urchins from the North Atlantic waters around Iceland. These distinctive seafood delicacies are prized for their edible gonads, known in culinary terms as uni. Located inside the shell, they have a rich, briny flavour and a soft, creamy texture. The sea urchins are supplied whole. After opening, the delicate edible parts are carefully removed from the shell and cleaned.
Flavour & texture
Uni has a distinctive ocean flavour, with briny and slightly sweet notes. Its texture is soft, creamy and delicate. Flavour, colour and edible yield may vary with the season and the individual sea urchin.
Culinary uses
Sea urchin complements refined pasta, risotto, fish and shellfish dishes. Uni can also be incorporated into a butter sauce or emulsion. For warm dishes, add it towards the end of preparation to preserve its delicate texture. For a simple presentation, use just a few complementary ingredients, such as a little citrus or a light broth. Before serving raw, confirm that the supplied batch is suitable for raw consumption.
