Balfegó bluefin tuna toro
Toro is the rich, highly marbled belly meat of bluefin tuna and is one of the most highly prized cuts in Japanese cuisine. Its high fat content creates its characteristic tender texture, rich flavour and pronounced marbling. Toro is particularly suitable for preparations where the exceptional quality of the tuna itself takes centre stage.
Flavour & texture
Exceptionally rich, full and buttery, with pronounced fat marbling. Toro is fattier and softer than both akami and chutoro.
Culinary applications
Particularly suitable for sashimi and nigiri. Toro can also be very briefly seared or grilled, allowing the natural fat to enhance its aroma, flavour and succulence.
