Balfegó whole bluefin tuna

A whole Balfegó bluefin tuna for professionals who want to portion and utilise the different cuts of this exceptional fish themselves. Atlantic bluefin tuna (Thunnus thynnus) is renowned for its deep flavour, firm texture and the significant differences in fat content between the various parts of the fish. A whole tuna provides access to the well-known loin and belly cuts as well as a variety of gastronomically interesting parts around the head, collar, backbone and tail. This allows virtually the entire fish to be used in the professional kitchen.


Flavour & texture

The characteristics vary depending on the part of the fish. Akami is relatively lean, deep red and firm. Chutoro is softer and more marbled, while the belly provides the richest and most tender cuts, including toro.


Culinary applications

Suitable for professional preparation into sashimi, sushi, nigiri, tartare, tataki, tuna steaks and grilled dishes. The less commonly used parts of the tuna also offer interesting possibilities for both hot and cold preparations.
