Fresh Alsatian Char

Alsatian Char is a refined farmed fish from the salmonid family. It is appreciated for its fine texture, succulent flesh and elegant flavour. The flesh has an attractive pink to light orange colour and combines the delicacy of trout with the richer character associated with salmonids. Thanks to its consistent quality and the availability of different product formats, Alsatian Char is particularly suitable for professional kitchens.


Flavour & texture

Refined and mild to full-flavoured, with tender, succulent and finely textured flesh. The texture is delicate yet firm enough to hold together beautifully during cooking.


Culinary applications

Excellent for pan-frying, grilling, poaching, steaming and oven cooking. The whole fish can be prepared beautifully as a centrepiece, while the fillets are particularly suitable for individually portioned main courses. Pairs particularly well with butter, citrus, fresh herbs, fennel, asparagus and light sauces.
