In the Mediterranean Sea, the carpet shell is known as palourde or clovisse. This oval and flattened shellfish is about five centimeters in size. The color of the shellfish varies from white to black and from gray to yellow. The carpet shell appears to have a checkered pattern and is always mottled. The flavor of its fine, tender meat is highly appreciated. The shells impart a lovely salty flavor to dishes. This shellfish should be cooked or stir-fried for a maximum of 3 minutes and is very tasty in pasta sauces, fish stews, and soups.
