Balfegó tuna stomach -60°C

In Balfego’s hometown of l’Ametlla de Mar, the stomach of the bluefin tuna is known as butxi and is the main ingredient of a local dish called by the same name. It has a rough texture and requires thorough washing and a long boiling to make it soft.
